“Meek” means something like humble or gentle, a person who has kindness as the defining feature of his character.

Blessed are the meek,
    for they will inherit the earth.

Matthew 5:5

So God promises the whole world as a possession to the people who are humble and gentle. Who better to care for the earth than the people least likely to reach out and take it for themselves? The kindest people, Jesus says, will be the ones to steward creation.
